Listen is tested against overhearing people in adjacent rooms, other tables, and whispering. but it's also used as a check against Sneak. So listening in a room where it's lkely spies/thieves will be passing through and where you could hear people in other rooms or at other tables is ideal.
So popular taverns, basically.
it's probably the easiest skill to buff without gettng called a twink. Really, it's one of the few skills itd be suspicious not to use all the time in public.

It's easy to skill up if you spend a lot (emphasis on a lot) of time in a tavern with other players. If you spend a lot of time alone, it's much more difficult (nigh impossible) to skill up without doing something wonky.

True, true. it's actually pretty easy for a spy type to skill it up at the same time as sneak and hide. you try to stealth into a tavern, hide, and listen for a while. then you switch to another tavern/room if nothing signifcant is happening. Gettng a job where spying is valued is... well, pretty much every clan wants spies and people to double as spies. So really it's just gettng a job.

Also listen is a toggle skill. No matter if it's on or off, typing "listen" by itself will toggle it the other way. But you can type "listen on" and if it's already on you get a message saying it's already on. If it's off it'll toggle it on. It fades by itself eventually and shuts off. Most holes you can avoid by looking in the direction you're going. Like some places if you "look east" you'll see there's a big huge chasm to the east. So don't go there, it's a hole. Some are the shield wall, if you're next to the shield wall and there's a big drop then the room you're in might say "blah blah blah and to the north the great Shield Wall drops" and if you look north you see "in the air" or "over the shield wall" or something.
Some holes you can't tell til it's too late. But most you can prevent falling into by just paying attention to the room you're in and the room you're thinking about going to.

these crafting skills, do they need lots of parts? special tools and facilities? i guess history channel ruined it for me a little when they taught me that leather making demands vats of smelly chemical piss goop and dung and etc. or do you just get a couple parts and magic 'em into a finished product?

Crafting in Armageddon doesn't get that deep into realistic crafting. Seeing as how there's no metal or electricity that's probably a good thing. Otherwise it might take you a RL month to sew that heavily-beaded silk gown instead of just 40 seconds.

is it possible for areas to get "picked clean" of forage-ables? if so, how long do they need to regen?

If you mean things you can see in the room and "pick" from, yes, and i'm not sure how long before the refresh. I thnk they regrow one per day.
if you mean things you get using "forage", no, they are randomly generated immedately on-demand.

does food rot after a while? when do the npcs empty out things they "already have too many of"? at dawn? once a week? has anyone compiled a handy list/map of what shops buy what off of you?

A lot of people use excel to map, there's an old one on the website that's been passed around for a while. In general it's easier since you can represent a cell as a box, add notes, etc.

the game suggest "try picking instead" when i try to get fruits or herbs or whatever out of plants, but if i try the pick command it just says i set to work on the lock. whats the correct syntax?

First look at it. It'll say there are # of whatever on plant/vine/shrub. This is important because you need plant/vine/shrub or whatever in the syntax too. So it should look like "pick gourd vine" when you type it.

And its a decent amount, if you're charging on every animal you run into, then spam trampling you're going to exhaust your mount fairly quickly. I'm not sure if the stamina use goes down with the level of your skill, like 'bash' 'kick' 'disarm' or not.
