Mekillot, you are perpetuating several pieces of bad information. Base O sure as heck contributes to weapon accuracy. Training unarmed can raise base O. Therefore... Training unarmed will raise unarmed offense. training unarmed will also raise base offense, which takes us back to point a...

If you can't tell, then I don't think it works that way. The logic is: Base offense + weapon skill +- weapon modifiers (and probably a stat, and other stuff) equals accuracy. This is why some characters get capped at a certain level of weapon skill, unable to advance for lack of ability to get more skill failures. Not so much a bonus. Let's say it is more or less the thing that rates how good you are in combat. If you earnestly practice it up, it's not a bonus so much as progression in that particular area, much like any sort of skill or level progression it gets tougher to raise as it goes up, but comes with better results.

It has been said there is an additional universal or base defense skill not listed in that chart. Is there an addition base offense skill that is also not listed in that chart?

Offense and Defense are separate skills. You can easily have 90 offense/defense and have -1 on everything plant and avian in terms of weapons proeffeciency. Which is what this table is. Your familiarity with weapons/species.That familiarity affects your defense and offense both, I 'suspect', though cannot confirm. Definitely defense ... or was it offense? I dont remember. I never gave enough fuck.

If it helps both... Does that mean chopping people will make it easier to dodge being chopped by people? Does being chopped by people make it easier to chop people? What exactly raises weapon/species familiarity?
Before looking at that chart I believed Offense and Defense were one skill. So now I'll fall back on older notes. Already had that shit figured out, so I thought, and now I know I do. Also, trash my misinformation on offense.

Fighting with the sort of creatures indicated in the listing, like for instance... Yes, you can raise your baseline off/def, sparring. But you're going to be a million times better vs people than animals if all you fight is people. That is why my GMH hunters would always insist on going out, rather than sparring, to 'work' rather than dick around, also because of the coded benefit. What was amazing was that at no time ever was the suggestion taken from me, and the clans would slowly empty out of hunters other than lifesworn and leaders.

Well, if the practice is to get people to a sustainable level for HUNTing, you might want to HUNT if they're to work on the relevant skills.

There lies the responsibility of the clan leader to get recruits out of the city and the responsibility of the staff to have peak clan and off peak clan leaders. ( which doesn't happen) Not only is it good for hunters for archery and hunting skills, it's good for warriors and ride. This is one of the reasons clans are a tough sell to some people, it's often better to skill up first then join a GMH because you're limiting yourself for roughly a month. That's a long time if you're in a clan with a bunch of bad RPers or you're not getting out like you should. Ain't nobody got time for that!
