Some of the rooms in the pymlithe stands aren't outdoor rooms and will allow increased stamina regeneration, check with the weather command.

My memory is that they're all outdoors and subject to weather, but are at least shaded.

Of all the things that will ruin your day in the Grey. Rantarri are most likely to. Rantarri can easily destroy almost all kryl, and tembo and whoever said they dont have anything special forgot they have likely high advanced sneak and move extremely fast sneaking that can keep up with a human on foot running. The yompars aren't so bad if you are buff but they hit like a train. If you are not really buff what the fuck are doing so far into the Grey alone? Commoners know to fear the Grey and this is one danger that is accurately portrayed IG thankfully.
Warrior with shield and nomad or hunter (which has ride now) sub, or a breed warrior, would be the best mundane class if you want to roleplay a forest guide etc, followed by ranger...Your ranger is going to have a bad time.

What weapon should I use for big boy damage/shield use? Chopping?

You could always manmode that shit and use branched slashing weapons with a shield.
Really is a shame that nearly all of the advanced weapon skills require two-handed.

Since I can't edit on mobile Is the benefit of wielding a shield better than the downside of holding a weapon? So holding a knife and wielding a shield is good or bad

Assassin and burglar starts with throw. Ranger and warrior can branch it.
Burglar is best, assassin is second best. Both get it to master but burglar gets it slightly higher.
Rangers and warriors only get like 70 or something, I think.
Throw is not that great.

A lot of things are broken on a max-strength half-giant. Throw is disappointing even on strong humans. A maxed assassin with extremely good strength can commonly throw three or four knives into somebody without killing them, and knockdown is far from guaranteed, nor are poison procs.
