I know you used to be able to learn ride, despite whether or not your guild/subguild could learn it.
How does this work? What does it max out at/about? What other skills, besides ride and languages, can you learn if you didn't start with them?

Pilot and Stoneworking I know for certain. Though a recent change may have hampered stoneworking from branching. IIRC

Ride (insert disclaimer about being unable to say for sure), if you don't get a boost from a guild or subguild, gets to journeyman in my experience. Guild/Subguild gets it higher. I've seen Advanced on obviously one guild(rumored to get to master though not able to confirm), and on a couple subguilds as well. Pilot can be learned regardless, and should get about the same area, though I've never tried to cap it across multiple guilds/subguilds. Used as it came.

Seems odd to me that a crafting skill would be one of those. Any ideas on max? How do you get started: just crafting larger pieces into smaller pieces? Use a tool to boost it enough that you can craft more? Crafting just seems like an odd one to me since you need to know recipes before you can fail at them to increase your skill.

The skill for doing that isn't stoneworking, it's forage. It's how GMH people raise forage without salting.

Wait, let me make sure I understand this: crafting a large rock into smaller rocks is based on the forage skill? Then what about the stoneworking that magickermarco was talking about?

Yes, breaking down larger stones into smaller stones works off forage, just like breaking piles of legs into individual legs works off skinning.
You can branch forage for merchants without ever really foraging much.
