Does anyone happen to know what skills / stats go into how successful you are at it?
I just beat down a skilled warrior that is fairly old, only to get completely flattened by someone I've never seen before, wearing almost all his newbie gear still.
So confused.

I think it's a combination of your unarmed skill, your offense skill, and your defense skill. Maybe stats, too.
I've always been confused on this, myself. Playing in the Byn for a long time, I could see a slow improvement on one of my characters when bar brawling. A few characters later and I suddenly had a 2 hour old newbie pc who was throwing people halfway across the bar.

Its a mix of: Agility and strength natural offense + defense (which operate like skills) parry (if you have it) shield use (if you have it and are holding a shield) weapon type you are using -comparatively to the opponents- (like if you are using daggers and are a master, and they are using polearms and are a novice, there is some behind the scenes calculation there too) -if- you are dual wielding, etwoing, etc - this affects things as well.
And then all this compared to them.
So an example situation would be.... you a Very Good/Very Good (STR/AGI) Warrior, with like middle of the road slashing and shield and parry using a sword and shield - them a Exceptional/Exceptional (STR/AGI) warrior with novice piercing, decent dual-wield, and novice parry using two daggers.
Now skill wise, you might be superior, but stat wise, slower and weaker, and then there is some inherent calculation about how the weapons compare, etc.
