I dont think House servant gives you skills that aren't bundled into merchant to begin with, so it's not a good combo. you should first decide what kind of services you'll be offering as an aide.
Pickpocket is definitly one of the best choices for main guild, if you plan to sell yourself as a spy that can also be used for petty annoyances. Dont underestimate the selling point of that. While the staff will probably fuck over your boss' plans to act like a scheming bastard towards another noble, theyre less likely to interfere with things like stealing unique items from another noble's valued underlings. Burglar works for that too but more with underling's apartments.
assassin is good for if you're selling yoursel as a spy/cleaner combo (as mentioned above). but you'll probably wind up being more of an assassin if the employer is short on them, or worse, if you're too good as an aide they may be afraid to use you as an assassin. So you'll wind up wasting your guild unless you specifically wanted to play an assassin called an "aide".
Ranger is a good choice if you wanted to be a spy/bodyguard/outdoor assassin combo. They get a defense boost, scan, listen, and a variety of useful support skills. youll need a few outfits though to avoid looking conspicuous when tavern-sitting.
As for subguild, it comes back to what youre planning to offer your employer as an aid. The subguild should either supplement critical skills your guild lacks or give you a shortcut to skills you need to build up early. If your guild doesn't have Listen, you need a subguild with it, because it's basically the most important skill a tavern sitter can have. Bard is a good subguild choice for Listen that comes with a language skill bonus (unless they tossed that) and gives you Sleight Of Hand early. Another skill that definitely shouldn't be overlooked is Brew. That one is useful no matter what youre planning to offer, though it's still less important than Listen.
The various mastercraft CGP subguilds are a better choice if you want to be an aide who is also a craftsman. yeah, you'd have fewer things to offer than a merchant, but the turnaround time on mastercraft submissions is pretty terrible outside of the GMH. Which means most of your time will not be spent providing your employer with custom crafts regardless of what you choose.
Shit, i forgot about that. Another high mark for pickpocket as the primary.

Oh, and pick pocket has the greatest benefit of all. They get cooking to master. The only guild out there aside merchants that can master craft food.
