Does anyone have even a partial knowledge of how the the NPC AI reacts to situations outside the crim code where other NPCs and PCs become violent near/around them? Smuggling knocked-out, paralysed, shelled, etc... NPCs into towns is relatively easy - how do the local NPC's react to such an event? Can NPC's from different factions/types fight, without staff overseeing the combat?

I dont fully understand the question. If you're asking whether or not soldiers of red storm would try to attack a black beetle if you're trying to drag it past the gates subdued, they will.
Will soldiers of Red Storm attack a soldier of Allanak, if you're trying to drag him past the gates, they will not.
Though they might attack you, I think dragging subdued people is against the law? I forget this exactly.
The guards do have a special AI mode that prevents them from auto attacking things they would normally attack, because they are bodyguarding some PC, etc.
Technically, people "have" driven gurth into shells then dropped the shell off near some door guard. Waited for gurth to come out, causing the guard to insta attack the gurth and unguarding the door due to that. But while it 'sounds' like an imaginative way to go about things, distractions and so on, it is considered an abuse of npc's limited ai and will get you bonked on the head by the imms.

Last time I checked, dragging a subdued person didn't get me into any trouble. Was a link dead guy tho so. I think I've been dragged around inside before and was fine? It might matter if nosave was on or not.
This is actually a topic I really wanted to know more about. Crimcode triggers and what you can and cannot do before NPC's aggro.
Let me outline some of my specific questions here to start expounding on this topic:
((I have heard different locations have different rules and there are supposed to be things which you can be appointed so as to negate crimcode. Lets presume in these scenarios, that you're a regular vanilla PC, unclanned, no assassin inks.))
1. If you are in a closed public room, say in the Tooth in Tuluk, the curtained rooms upstairs in Luirs or Reds Retreat, etc. (With NPC's obviously outside but not inside) Does crimcode trigger if you attack someone inside there? Or subdue someone inside there? So long as curtain is closed?
2.(a) If you fire an arrow or throw an object from an adjacent room (with no NPC's present) does it trigger crimcode?
2.(b) If you fire an arrow or throw an object and MISS in the above scenario, does it trigger crimcode?
3. If you use the HIT command while armed with a weapon, does it trigger crimcode?

Thank you for the answers! Will NPCs that aren't considered guards do the same? Pedestrians, barkeeps and so on?

NPCs guards will bring down whatever law they see fit. NPCs townspeople will call for the guards, but will be too afraid to act. Generally.
It's mostly about crimcoded VNPC areas and adjacent NPCs.
1.It didn't in the past. That is why the Gaj has a guard or two at all times in the sleeping area now. People used to close the tarp to kill someone.
2.Archery wouldn't, I think. Throw has to have a target in an adjacent room, so it will. It doesn't matter if you miss. Just like missing a backstab will get you crimeflagged still.
3.Hit is the same as kill, except in brawl flagged rooms.
