Having never played a Gypsy, I've always been a little confused as to why the Tan Muark had such reverence towards these lackluster mounts.
From other players, I've heard everything from sentience and the ability to contact and converse with humanoids to some old gyppo leader from waaay back in they day essentially saying, "These are cute. Don't fuck with them." and all manner of no-truths, half-truths, and maybe even full-on-truths in between.
Anybody able bel to shed some light?

Simplest answer to this would be, "Why the fuck not?".
I dont know how Tan Muark works now. Or if it even works at all and is basically extinct in all, but docs. But before, Tan Muark was so full of wealth and perks, that a TM was basically a touch below a noble of 'both' cities, and above an agent, of 'any' house. A successful TM anyway.
In other words, you need to give TM some flaws. Some predispositions, something to make the players at the very least react to things and thrive for 'something, even though they already had everything. Gwoshi is basically that thing. It's a conflict starter.
If you're wearing gwoshi stuff, TM will hate you. It's that simple. And if someone else is working for TM, they will try to fuck with you, to improve their relations with TM. What is the background, the reasons, the mythology for that isnt really relevant. I dont personally remember the actual legend, but there's basically one and it's like any other.
Sun Runners who are actually similar to TM in terms of being wildly respected and virtually powerful amongst the elven tribes, also have a similar conflict starter. You wouldnt want to wear stuff made out of braxat around them. Though, I guess it depends on players also. I've met SR who ignored people who killed their Braxat protectors. Thankfully, despite my general dislike for TM, I'm yet to hear of TM who ignored people who wore gwoshi stuff or killed them on purpose. If you do that kind of stuff and TM is all friendly with you, you're probably in for a rough ride any moment now.
Same with cutting trees for Akei'ta'var. Also a very dumb thing to do in front of them. Even if they do nothing to you, you've insulted them greatly enough for something bad to happen to you eventually.

you heard different reasons behind gwoshi reverence was because the TM that were being played were being excellent gyps. They would not divulge that this animal is something that they consider sentient, something they sometimes commune with, and led them many many many years ago out of the desert when their numbers were very thin. Being a good gypsy is about throwing smoke and being very protective of their cultural identity.
That's the big secret. Don't wear or eat their saviors.
