I feel like its been mentioned that burglars can be great sappers. Do Burglars not even learn how to use sap? Which is better, a warrior/thug who uses bludgeoning weapons, on an assassin who saps?

An assassin who saps, at the high end of the skill's levels, at least.
Actually, people often seem to operate under the notion that burglars are as capable in combat as anything but warriors, when in fact burglar weapon skills top out 20 points below those of ranger and assassin (city ranger, heh).

I just noticed burglars start with 20 in cooking skill. WTF and why?

Because most burglars/pickpockets are actually aides or tavern hostesses who moonlight sometimes .
